Recipe: Banana Chocolate Chip
Muffins

| There’s
hardly any sugar in these muffins, but they are so sweet, moist and tasty.
I’ve had several people tell me that this is their favorite recipe in my
book. |

2 c flour
½ c brown sugar
1½ t baking powder
1½ t baking soda
1 t salt
1 T oil
1 egg
3 T applesauce
2 T walnuts, chopped finely
2 T mini chocolate chips
3 very ripe bananas, mashed
Stir together first five
ingredients. In separate bowl mix oil, egg, bananas, and applesauce. Stir the
applesauce mixture into the dry ingredients. Add chocolate chips, and walnuts. Fill
greased muffin cups and bake at 350º for 20 minutes. For mini-muffins bake 15
minutes.
Yield:
12 muffins (or 24 mini muffins)
Serving Size: 1 muffin or 2 mini-muffins
