Recipe: Western Omelet

| Once
at a Mathias Mass Meeting (family reunion) Uncle Jerry showed me how to make
these omelets. He used to make them all the time at his restaurant. I’ve
never tasted a more tender, tasty omelet. |

2 eggs
1 T water
2 T green bell pepper, chopped
2 T onion, chopped
2 T mushrooms, chopped
1 t butter
¾-oz slice of American cheese* (cut in half)
seasoned salt
Whisk together eggs and
water, then pour into hot pan and cook slowly. As the egg on top starts to
cook, lift edge gently to let uncooked egg flow underneath. In separate pan
melt butter and saute green peppers, onion, and mushrooms. When eggs are almost
done, place sauteed veggies in the middle of the omelet, then lay on a half
slice of American cheese. Roll up (bring a flap in from each side) then put on
the other half of the cheese slice. A little sprinkle of seasoning salt is the
crowning touch. Cover with lid until cheese melts.
Yield:
1 omelet
