Recipe: New York Cheesecake

Mom got this recipe from one of the Italian ladies in their church in Connecticut. It is
almost identical to the cheesecakes that our friend Bob would bring from New York City every
weekend. This is the “real deal.” |

32 oz cream cheese, room
temperature
6 eggs, room temperature
1½ c sugar
2 T cornstarch
4 T melted butter
1 t vanilla
1 t lemon juice
2 c dairy sour cream (made by adding 2 T vinegar to FRESH heavy cream and
letting it stand at room temperature for a few minutes)
Mix all ingredients together
in the order listed, mixing well with wooden spoon after each addition. Grease
the inside of a 9″ spring form pan, and wrap the outside of the pan with foil.
Place in roasting pan which is half filled with hot water. Bake 30 minutes at
400º then lower heat to 325º to finish baking for the last 30 minutes. (If top
gets too brown, cover loosely with foil until finished.) Turn off
oven and let stand in the oven for one hour (Prop door of oven open with a
wooden spoon.) After taking out of the oven, put springform pan in
refrigerator overnight so that cheesecake is cold and well set. Gently remove
from pan and serve on a pedestal plate. Garnish with fresh strawberries in
Strawberry Glaze or some flavor of pie filling.
