Recipe: Vermicelli

| This
recipe of Aunt Donna’s is the one I now use for all of my Italian dishes:
lasagna, chicken parmigiana, stuffed shells, shells
florentine…everything! I make it up in big batches and freeze it in meal-sized
Ziplock bags. |

3# vermicelli pasta
Sauce (9 cups):
3 32-oz cans of fresh-cut tomatoes (You can also use stewed or crushed
tomatoes.)
6 large cloves garlic, minced
2 large onions, chopped
6 T olive oil
1½ T dried basil
3½ t salt
1 t pepper
Saute garlic and onions in
olive oil. Stir in tomatoes and spices. Simmer 2 hours. Serve over pasta.
Yield:
12 servings
Serving Size: 1 plate full
Units: 7 including pasta (1 cup of the sauce is 1 point)
